Berry Ripple Mousse Sundae 🍓🍦

What You’ll Need…

✔ 1 pack Vanilla Ice-Cream Shake
✔ 1 teaspoon Red Berry Water Flavouring
Vanilla Cream Wafer
1 sachet Dr Oetker Gelatine
Ice-cream plate


Method:

1️⃣ Prepare the Jelly Base

  • Mix 60ml of boiling water with 1 teaspoon of Red Berry Water Flavouring.
  • Add half a sachet of gelatine, stir well, and pour into a serving dish.
  • Place in the fridge to set.

2️⃣ Prepare the Mousse

  • Add a drop of boiling water to the remaining gelatine and mix in a drop of Red Berry Water Flavouring.
  • Add half a sachet of Vanilla Ice-Cream Shake to the gelatine mixture.
  • Top up with 60ml of cold water and mix to create a light mousse.
  • Spoon the mousse over the set jelly and return to the fridge to set.

3️⃣ Make the Berry Ripple Ice Cream

  • Mix 60ml of cold water with the remaining Vanilla Ice-Cream Shake powder.
  • Pour onto the ice-cream plate and leave for 1 minute.
  • Add a drop of Red Berry Water Flavouring and swirl to create a ripple effect.

4️⃣ Assemble & Serve

  • Spoon the ice cream on top of the mousse layer.
  • Cut the Vanilla Cream Wafer in half and place on top.
